A brewery and restaurant in Toronto is bringing in five master barbecue chefs for their own ribfest.

Liberty Commons serves Big Rock Brewery beer and food from restaurant group Oliver & Bonacini. The food already leans in a comforting direction pulling from drinking traditions and English roots, with everything designed to pair well with beer.

What goes better with beer than ribs? The brewery is having its own ribfest, and they’re bringing in some special rib chefs for the occasion.

The special guests that will be joining Liberty Commons chefs Chefs Ryan Lister and Steven Dowdell are Ontario ribfest pitmaster Zoltan Pozsonyi, Bob D’ambrosio from Kendale Products, Tara Lee from Eastbound Brewing, and Andrew Piccinin and John Horne who are both District Executive Chefs at O&B.

They’ll be competing to become Uncle Jack’s Full Rib Champion, an honour named after late friend and colleague Jacky Lo.

Bob D’Ambrosio will be serving a half rack of candied baby back pork ribs with three sisters salad and a cheddar scone for $30, Zoltan Pozsonyi will be serving a third rack of staple St. Louis pork ribs with Fort Erie BBQ sauce, onions, jalapeño, pickles and baked beans for $26 and Tara Lee will be serving a half rack of spicy dill pickle smoked baby back pork ribs with stout Beer-B-Q sauce and cowboy candy for $30.

Steven Dowdell will be serving a “G.O.A.T. Grill” of South African style goat rib chops, piri piri riblets, coiled sausage, monkey sauce, corn and garlic braai loaf for $30, John Horne will be serving cherry Coke boneless beef ribs for $28, Andrew Piccinin will be serving Italian-style pork belly ribs for $28 and Ryan Lister will be serving tonkatsu beef ribs with rice, kimchi, curry sauce and gochujang slaw for $28.
