The chef behind a Toronto restaurant that received Michelin Bib Gourmand status is now opening a brand new concept.

Chef Eric Chong opened R&D in Toronto with world-renowned “demon chef” Alvin Leung, and now the pair are onto their next project.

aKin is their newest restaurant specializing in Asian fine dining, “offering an exclusive blind tasting menu that challenges the senses and reimagines traditional flavours” according to their website.

“Our blind tasting menu is meticulously crafted to surprise and delight our guests, transforming the dining experience into an adventurous exploration of taste,” reads the site. “We draw inspiration from both traditional Asian recipes and contemporary culinary techniques, creating dishes that are not only visually stunning but also layered with complex flavours.”

The 10-course tasting menus cost a pretty penny at $275 per person. The whole experience is complemented by bespoke cocktails and fine wines curated by experienced professionals.

The space should be just as impressive as the tasting menu, with a chef’s counter seating just four and an intimate private dining room with a glass wall overlooking their wine selection. There’s also a custom DNA-inspired central light fixture that represents the reason for the restaurant’s name, which reflects the shared passions of Chong and Leung as well as the way dishes at aKin are modernized while still retaining their essence.

Reservations for aKin at 51 Colborne St. are now available starting Nov. 19.
