New plant-based restaurant just opened in Toronto

A new diner serving up plant-based sandwiches just opened its doors in Toronto.

Stefano’s Sandwiches took over the space that was vacated by Extra Burger when it closed back in the spring. The concept will be replacing the beefy burgers Extra used to serve with veggie-forward sandwiches, and their own veggie versions of burgers. They’ll also be serving brunch.

Stefano’s was created by the same team behind Gia, a plant-based Italian restaurant not far away from the new sandwich shop. The sandwich concept once operated out of Gia, but now has a brick and mortar space all its own.

The sandwich menu has options like an eggplant parmigiana, Italian sub and breakfast sandwich. The Extra Veg Burger has cannellini beans, kidney beans, quinoa, farro, panko, spinach, flax seeds and “lots of vegetables” on a sesame bun with garlic aioli and arugula, and their smash burger has a plant-based meat and farro patty topped with caramelized onions, pickles, Russian dressing, lettuce and cheese.

They offer much more than just sandwiches, though. To round out the diner concept, Stefano’s also offers a selection of small plates, pastas, sides and a main. Small plates include plant-based brie and white bean kale soup, and pastas include a lasagna with walnut ragu, spelt rigatoni and a gnocchi of the day. There’s also a salmon beurre blanc totally made from plants on the menu for a main.

As for weekend brunch, there’s a selection of items made with mung bean eggs, including Eggs Benny and Eggs Purgatory.

To further add to the diner feel, the interior design at Stefano’s has an old school vibe to its interior design that looks like your typical neighbourhood breakfast spot.
