Team behind shuttered Michelin-level Mexican restaurant doing pop-ups around Toronto

The team behind a popular Michelin-recommended restaurant that recently closed to the surprise of many has announced they’ll be doing a series of pop-ups across Toronto.

Fonda Balam showcased the flavours of Mexico through exemplary tacos and margaritas. They earned a spot in the Toronto Michelin Guide, but shut down around late spring, causing food lovers dismay.

If you’re missing the Mexican food from Fonda Balam or maybe never even got a chance to try it, the chefs have some good news for you.

The people behind Fonda Balam, Kate Chomyshyn and Julio Guajardo, have now announced that as part of moving forward with their project Liebre, they will be doing a series of pop-ups. Liebre is an online store specializing in the pair’s Mexican-inspired products.

“We’ll be hosting a series of pop-up dinners at various locations this summer. Each pop-up will feature a specially crafted menu with the flavours of Mexico that is tailored to the unique atmosphere of the venue,” reads a post on Liebre’s social media.

“We’re proud to incorporate some of our Liebre products into each menu. This means you’ll get to taste and experience the flavors of our products while enjoying a delightful experience. Not only will these pop-up dinners tantalize your taste buds, but they will also serve as a source of inspiration for you to create amazing meals at home.”

Liebre’s first pop-up will take place this month at True History Brewing.

“We believe that our delicious food will perfectly complement their crispy pilsners and lagers,” reads a post from Liebre announcing the pop-up.

It definitely sounds like it will: guacamole and chips, blistered shishitos, wild Cuban shrimp, ceviche rojo and a fried quesadilla will be on the menu.

Liebre will be popping up at True History Brewing on St. Clair West from July 9 to 14, with hours from 5 p.m. ’til sold out Tuesday to Thursday, and noon ’til sold out from Friday to Sunday.
