Toronto is getting a new brunch spot that will serve all kinds of pastries and natural wines.

Gateau Ghost is the brainchild of Jayden Park, who initially started the business based on one humble item: the madeleine. The spongy sweet treats have been anything but plain, with flavours like Matcha-Tachio, Cinnamon Bum, Frosty Flake, and Liz Lemon. His catchphrase has been “resurrecting the madeleine.”

He came up with the project after being laid off during the pandemic, relying on his cooking chops from having worked at places like the upscale restaurant Alo in Toronto.

“I wanted to offer something different from Toronto cafes but also after experiencing job loss during the COVID pandemic, there was a personal resonance with the idea of finding relevance in something often overlooked,” says Park.

“Madeleines, often a simple and understated treat in cafes, symbolized this idea. By elevating the status of madeleines and making them a focal point of the menu, there’s an opportunity to infuse them with personal significance and create a unique experience for customers.”

Now, he’s going to do a lot more than just bring lovely little madeleines to life: he’s opening up an entire brick-and-mortar brunch spot.

Other than his signature madeleines, the physical space for Gateau Ghost will serve pastries, brunch, coffee, natural wine and other drinks.

Aiming for a May 2024 opening, Gateau Ghost will be located at 974 College Street.
